Soba Noodle Lunch!
Oscar left this morning for 4 days! He is going up north to the cabin with Nana and Papa. He was excited and apprehensive all at the same time. He has only been away from us for a night… And that has only happened a few times. I spent the last few days prepping him and getting him excited about the trip. He doesn’t have any concept of time or really understand the vocabulary for time… Anything before right now is “last year” and later is later today or tomorrow or a year from now for all he knows. Nana and Papa do a great job keeping him busy and he is going to have their full attention… What more could a boy ask for! Four days is a long time for us to be apart. I spent so much time prepping him I hadn’t really thought about how I’m going to feel with him gone. I miss him already!
But I am excited to spend a few days with just my girls. Today I made a special lunch for them and it’s a huge hit! So I thought I’d share.
Whole Wheat Soba Noodles, one bundle cooked per directions.
2 cups frozen mixed veggies simmered for a few minutes in 1/2c veggie stock and 1T soy sauce.
Drain noodles and mix with veggies.
In a separate bowl mix a 2T stock with 1t corn starch, and then add to noodles and veggies.
The original recipe I was working from called for chicken, which I didn’t have… So I decided to add some egg for protein. With the whole mixture over low heat add a lightly beaten egg and stir to cook the egg (you will see the egg start to appear white as it cooks).
Lunch is served! They loved it, made a mess and even had seconds!
